With the arrival of summer, we crave freshness and these are the salads we want to put on our tables. This is moreover what I was able to realize when I asked recently on my instagram account, what recipes you would like me to offer you. The salads were almost unanimous.
And that’s good, because with the return of heat, I only cook that.

Salads, we can imagine all kinds. We never get bored. Well, I admit that I don’t always take the time to photograph my plates. But I will make an effort. So, for sure, I won’t put all my salads here. But I’m going to try to post more regularly on Instagram (By the way, if you’re not following me yet, maybe it’s time-click).

In the meantime, today, I offer you a salad that I make regularly. In fact, I even do it very often, because regularly a packet of squid lands in my cart. I love it, and I can’t resist. Only, once at home, I don’t know what to do with it and I always end up with this salad. It must be said that it is delicious. Squid and chorizo ​​go together wonderfully. For the rest, I compose according to the season and with what is in my fridge. This time, it was pretty tomatoes and arugula (because arugula goes well with all dishes!).

Squid salad with chorizo:

125 g chorizo ​​(strong)
750g squid rings
3 cloves of garlic
1 tbsp sherry vinegar
100g arugula
4 small tomatoes
salt pepper
olive oil

Cut the chorizo ​​into slices.
Brown it in a large hot pan. It is not necessary to put oil.
Stir often. Remove the chorizo ​​from the pan and save the rendered fat.

In the same skillet, put the calamari rings.
Cook them over high heat for 2 minutes. The cooking must be very short so that they are pleasant to taste.
Halfway through cooking, add the grated garlic cloves.

In a salad bowl, put the calamari and the chorizo. If there is water in the pan, discard it.
Season with vinegar, olive oil, salt and pepper.
Let cool to room temperature.

Add the chopped tomatoes and serve with the arugula and lemon.

To finish: the real secret of this salad is the minute cooking of the calamari. So they will be very pleasant to eat.

Do not hesitate to add fresh thyme, olives, to vary the tomatoes…
