Autumn does not only have disadvantages. It’s always a pleasure to find squash. I love to cook them. And besides, I prepare them both savory and sweet. You can find a number of recipes on the blog.

Butternut is without a doubt one of my favorite squashes. I really like baking it in the oven. Today, it is a very greedy version that I propose to you. Indeed, my pretty butternut squash is deliciously au gratin in the oven with camembert. As you can imagine, it’s delicious. We particularly appreciate this kind of comforting recipes. I used a very fragrant camembert. It takes what it takes !
Of course, you can choose the cheese you like the most, as long as it is melting. Leftover raclette cheese would also be perfect.
For the accompaniment, I made it simple with a small lamb’s lettuce. I find it perfect.

It is the dish of the season, to be made without hesitation.

Butternut stuffed with Camembert:

1 pretty butternut squash
1 small onion
150 g of bacon
1/2 camembert
1 tbsp heavy cream
thyme
salt pepper
olive oil

Preheat the oven to 210°C.

Cut the butternut squash in half and remove the seeds.
Drizzle with oil, season and sprinkle with thyme.

Bake for approximately 45 minutes. The flesh of the butternut squash should be tender.

Finely chop the onion and sauté in a little oil.
add the bacon bits and let them brown.

When the butternut squash is cool enough to handle, scoop out the flesh with a tablespoon.
Mix with the bacon.
Add the cream and half the Camembert cut into small pieces.
Check the seasoning.

Pour the preparation back into the butternut squash and spread the rest of the sliced ​​camembert on top.
Add a little thyme and return to the oven for 10/15 minutes.

Serve hot. Serve with a salad.

To finish: this recipe is very good for 4 people. I serve the butternut halved lengthwise.
We sometimes find very small butternuts. In this case, cook 2 and serve 1/2 butternut per person. The cooking will take a little longer.

For a vegetarian version, just remove the bacon bits.
