I hope you agree with me that gravlax salmon is a must for holiday tables. It is very simple to make and really excellent. You can find my basic recipe here and here. Afterwards, it is possible to vary the flavors. This time, I just flavored it with smoked chilli.
To accompany this salmon, you can stay in Nordic flavors and simply choose a black bread. Or, we can prepare blinis. It’s nothing complicated to do, and frankly it’s much better than those you can buy.
I offer you these blinis as an accompaniment to gravelax salmon. of course, this recipe will go well with smoked salmon. They will be perfect with many toppings, especially taramasalata, homemade of course…
These blinis are made with a mixture of white flour and buckwheat. It’s even more fragrant. Unlike this recipe (which is also very good!), they contain baker’s yeast. It is therefore necessary to let the dough rest. And for even more fluffiness, the egg whites are whipped before being added to the batter.
You can absolutely prepare them in advance, and pass them very lightly in the microwave before tasting them.
90g T55 flour
50g buckwheat flour
1 tsp dehydrated baker’s yeast
1 tsp sugar
1/2 tsp salt
30g melted butter
Separate the yolks from the egg whites.
Use milk at room temperature or very slightly warmed.
In a bowl, put the flours, baking powder, sugar and salt. To mix together.
Make a well, and put the egg yolks, milk and butter. To mix together.
Cover and let stand for 1 hour.
At the end of this time, whisk the egg whites.
Add them to the risen dough, gently with a spatula.
Heat a pancake pan.
Lightly grease, and pour a small ladle into each cell. Let cook for about 1-2 minutes over medium heat. Gently flip each blinis as soon as possible. Cook on the second side, then let cool on a wire rack.
Do this until the dough is used up. I made about twenty.
To finish: I use a pancake pan. It’s super convenient. It is quite possible to do without, but the pancakes will then spread out a little more and will be thinner.
Thus, it will be possible to make them smaller, especially for toast. Because I haven’t found the perfect accessory for little blinis yet.
I know that there are kinds of silicone molds that you put directly on the pan. I also tested one of this type some time ago, but I found that it was completely zero. Afterwards, it may be from the model I tested…
To accompany my blinis and my gravlax salmon, I had prepared a little dill sauce. You need 2 tbsp of mustard, 1 tbsp of vinegar, 1 tsp of sugar, oil and dill.
I really like to prepare a sour sauce, by simply adding a little lemon juice to liquid cream. It thickens instantly. All that remains is to season it.
