The recipe that I propose to you today is so simple that you will be able to make it immediately. These very chocolatey cookies will be perfect for a snack. And since they are really excellent, I think they will be very, very often on your table.
It’s actually a brownie batter, but it’s baked like cookies. The inside stays plush, while the top gets all shiny. Above all, they are deliciously chocolatey.
I topped my brownie-cookies with milk chocolate chips and added chunky chocolate chunks on top. I find it so delicious as a presentation!
150g dark chocolate (70%)
80 g of sugar (whole)
1 tsp vanilla extract
1/2 tsp baking powder
100g milk chocolate chips
Melt the chocolate and butter in the microwave in 30 second increments.
Whisk egg and sugar.
Add the warm melted chocolate. To mix together.
Add the vanilla. To mix together.
Add flour and yeast. To mix together.
Add the chocolate chips. To mix together.
Place the dough for 20/30 minutes in the fridge. It will firm up slightly.
Preheat the oven to 180°C.
On a baking sheet, arrange 8 cookies, spacing them apart. I used my ice cream scoop to have round balls of the same quantity.
Coarsely cut a few squares of chocolate and arrange them on top, slightly flattening the balls.
Cook for about 12 minutes.
Leave to cool before taking them off.
These cookies are still very good the next day.
To finish: it is quite possible to add pecans or other dried fruits or to prefer white chocolate or caramel chips. Everything is allowed.
I made 8 big brownie-cookies. You can make it smaller. You just need to adjust the cooking time slightly.
By the way, I let you admire the pretty saffron flowers which it is the season for picking. Once the pistils are removed, very beautiful crocuses remain which brighten up the fall.
