I am always delighted to see that one of my little recipes pleases you. My blueberry pastry squares are part of these recipes. Easy to make and delicious, you made some, alongside the rhubarb ones one of your favorite recipes.
Today, I offer you a new variant, pure fruit. And since I’m definitely very inspired to come up with names for my desserts, I named them very wisely, fruit squares.
These squares are just like a pie rich in fruit, a pie, but with the added pleasure of a delicious shortcrust pastry. It’s a delight.
250g of flour
30g ground almonds
75g brown sugar
1/2 tsp salt
1 level tsp baking powder
1 tbsp juice lemon (1/2)
In a bowl, put the flour and iStir in the butter in chunks with your fingertips.
To add the other ingredients and incorporate them gradually.
If you have a Thermomix put everything in the bowl and knead until the dough comes together. If necessary, add a splash of water.
Divide the dough into 2/3, 1/3.
Place a 20×20 frame on a baking sheet.
Spread the largest piece of dough at the bottom and press down with your fingertips.
50g brown sugar
Preheat the oven to 180°C.
In a salad bowl, mix the washed and dried blueberries, brown sugar, cornstarch and lemon juice.
Pour this mixture over the dough.
Spread the rest of the dough, crumbling it coarsely.
Bake for approximately 45 minutes.
Leave to cool before unmolding and cutting.
Sprinkle with icing sugar.
To finish: blueberries lend themselves well to this preparation. Other fruits will also be perfect. if it hadn’t been so hot lately, I would definitely have tried the cherries.
