Beef strogonoff

At the beginning of the year, I am very interested in the cuisine of Eastern countries. The desire was given to me by Kitchen Trotter who surprised me by taking me on a trip to Russia thanks to their latest box. By doing some research I discovered many recipes that tempt me a lot. I also spotted some sweet specialties that really tempt me and that I promise myself to do in the next few days.

In the meantime, this is the beef strogonoff recipe that I am going to give you. Composed of beef and mushrooms, this dish is delicately flavored with paprika, mustard and dill. I served it with potatoes and pickles. We really enjoyed ourselves.
As it is also a simple and quick recipe to prepare, it is certain that I will make it again regularly.

Beef strogonoff:

700g beef steak
400 g button mushrooms
1 onion
1 tbsp spices (paprika, mustard, dill)
250ml beef stock
1 tbsp cornstarch
1 nice tbsp heavy cream
salt pepper

In a skillet, sauté the chopped onion in a little oil for 1 minute.
Add sliced ​​mushrooms.
Salt lightly and cook over high heat for about 5 minutes.
Pour the contents of the pan onto a plate and set aside.

In the very hot pan, pour a drizzle of oil then brown the meat cut into strips.
Cooking will take about 5 minutes.
Add spices and mushrooms.
Add the hot broth and the cornstarch mixed with a spoonful of water.
Continue cooking over high heat for a few minutes.

Add the cream and season.
To mix together.

Serve this beef hot with small steamed potatoes and gherkins (malossols).

To finish: the choice of meat is essential to the success of this dish. As I don’t know anything about it, I simply trust my butcher. I think he recommended slices of lower ribs. In any case, it was very tender.

You can make your own spice mix. Paprika is dried bell pepper. It is not smoked in this recipe. 1 spoonful of old-fashioned mustard will replace the mustard seeds.
