When the days are short and it’s cold, I like to warm myself up with a cup of coffee or a good hot chocolate. As an accompaniment, I like cakes, especially the banana cake, the banana bread. I like it with chunky chocolate chunks which go wonderfully with the flavors of the baked banana.
This cake is one of my favorite cakes. I’ve been doing it for years. It corresponds perfectly to the idea that I have of a comforting cake.
It is as good warm, almost straight out of the oven, as the next day.
100g soft butter
100g brown sugar
2 eggs (room temperature)
1 tbsp vanilla extract
1 tsp baking soda
1 pinch of salt
100g chocolate (70%)
Preheat the oven to 180°C.
Combine butter and brown sugar.
Add the eggs. To mix together.
Add yogurt and vanilla extract. To mix together.
Add flour, baking soda and salt. Mix briefly.
Mash 2 bananas with a fork.
Coarsely chop the chocolate.
Add the bananas and chocolate to the batter. Mix without insisting.
Pour the mixture into a cake tin.
Cut the last banana in half and place it on the dough.
Bake the cake for about 50 minutes. Check for doneness with a wooden skewer that should come out dry.
To finish: this banana bread lends itself to other fillings. I sometimes like to add pecans to it. You can also spice it to your liking.
It is also very good in individual version, in muffin molds. At this point, garnish the top with a slice of banana. You will then have to reduce the cooking time.
