Matefaims… It’s a funny name, isn’t it?
In fact, it is simply thick pancakes. It’s a recipe from the countryside, which I ate when I was little with my grandmothers. In a sweet version, with apples, it’s delicious!
And it’s even more delicious with a little salted butter caramel.
Making these pancakes is really very simple. Just grate the apples and add them to the batter. The most classic way of cooking is to cook all at once to have a large, very generous pancake. But, it can be a bit tricky. Indeed, you need a low heat so as not to burn the pancake, and you have to manage to turn it over. I find it easier to make small individual pancakes. Plus, it’s cuter.
I like to prepare these pancakes for afternoon tea. They can also be served for breakfast, as a change from pancakes.

Apple starvation:

160g flour
50g sugar
150ml milk
30g melted butter
2 eggs
2 beautiful apples
In a bowl, put the flour and sugar. To mix together.
Make a well and put the milk, melted butter and eggs. Mix starting from the center, then gradually taking the flour.
You can also put everything in a robot and mix for about ten seconds.
Grate the apples finely, then add them to the preparation.
Let stand for at least 20 minutes.
Heat a pancake pan.
Grease it then put a small ladle of dough and spread it slightly to get it round. Do 2 or 3 like this.
Let cook for 1 to 2 minutes. Then return them.
Do the same for all the dough. With these quantities, I make about 12 pancakes of 10/11 cm.
Serve hot with optional salted butter caramel.

To finish: this recipe is the most classic. For lighter pancakes, it is possible to whisk the egg whites before adding them to the batter.

You can also add a dash of calvados or rum.

It is possible to prepare them in advance and reheat them slightly in the microwave.
