To change a bit from the clafoutis, I suggest you make a cake rich in almonds and cherries. A real seasonal delight that will be perfect at tea time.

Last week, I had the pleasure of returning from shopping with a nice crate of cherries. The price was very soft, and I was finally able to treat myself. I am not lucky enough to have any cherry trees, as all my attempts to grow them have ended in the shrub dying prematurely. We either have a green thumb or we don’t… So every year I watch the others stuff themselves with cherries with a touch of jealousy. So, with my 5 kilos of cherries, it was party time. I started by making this cake.
Cherries go very well with almonds. This cake is a marvel of sweetness. It’s also gluten-free and can be prepared in less than 10 minutes.

4 eggs
120g sugar

100g butter

200g ground almonds

Preheat the oven to 180°C.

Whisk eggs and sugar.

Add the melted butter and mix.

Add the almond powder. To mix together.

Pour the batter into a 20/22 cm silicone mould.

Wash and stem the cherries, then arrange them on the dough.

Cook for 30/35 minutes.

Let cool before unmolding.

Sprinkle with icing sugar.

Store at room temperature.

To finish: as for a clafoutis, I don’t pit the cherries. Keeping the pits also means keeping the juice from the cherries in the fruit.
For a more marked almond taste, you can roast the almond powder by passing it for ten minutes at 160°C.
